My beautiful plate contained cookies made by my best friend. It was such a welcome gift at a happy, but busy and stressful time of year. My friend cares for me very much and this is just her latest way of demonstrating that caring. Today I will pass the plate to a friend who I seldom see, in another town.
Here are some wonderful, easy cookies!
LEMON ON LEMON SHORTBREAD COOKIES
5 cups flour
1 cup sugar
2T finely shredded lemon peel
2.5 cups butter
2 cups powdered sugar
2T lemon juice, more as needed
Mix flour sugar and lemon peel
Cut in butter gently until mixture resembles fine crumbs and begins to cling.
Knead gently until dough forms a ball.
Roll out dough between parchment sheets. ¼ inch thickness
Cut simple shapes.
Bake on an ungreased cookie sheet at 325 degrees for 23 minutes, or until slightly brown.
Cool on cookie sheet for 5 minutes, and then remove to racks to cool.
Mix icing and spread lightly on cookies.
